2/17,19 Making sauerkraut and researching topics for midterm project.
1/2 class switches with other on alternate days-Document Sauerkraut making process photographically as well as in notes (pH, appearance of kraut, types of colonies found, progression of colonies, microscopic appearance of bacteria)
Tasks: 1)½ class will make cabbage kraut in jars--probably dry salting and using plastic bags to submerge. IN PAIRS. IN PAIRS. SCBH 3)Check pH with paper. 4)½ will work on brainstorming a project/information seeking and building a web site-PROJECT MUST BE SET/CLAIMED BY END OF THE WEEK. w/Bailey
2/24, 26 Lab DAZE, part 2-Meet in 466 PHILLIPS EITHER Tuesday or Thursday.
Document Sauerkraut making process photographically as well as in notes (pH, appearance of kraut, types of colonies found, progression of colonies, microscopic appearance of bacteria) ½ class on Tuesday and ½ on Thursday. Use the same teams scheduled for “Kraut Tuesday” and “Kraut Thursday.” In PAIRS.
Tasks: 1)Look at and classify colonies, make slides of bacteria, stain with Methylene Blue, inspect bacteria by microscopy, document. Streak kraut again on MRS to look for progression, check pH again. SCBH in Phillips 466. 2)Other ½ of the class has a “free” day to work on projects, cook, build web sites. Workshop day with Bailey if you want some advice. She will be available during scheduled class time on Tuesday and Thursday at Einstein Bagels in Centennial Hall.
3/3, 5 Sourdough baking week and sauerkraut follow-up!!!
Bake me something with your sourdough starter! IN PAIRS. It woyuld be nice to bring enough to sample for everyone, but at least Bailey, Dr. Running and I get to try it!
Tasks: Tuesday: 1) MEET IN PHILLIPS. P466 Lab will be open with DBH present from 2:30-4:30. Come by anytime in this window. Document (photo) your plates, streak kraut again and take pH of kraut again. Only one partner needs to come so that we can avoid overcrowding 2) Make slides of at least two abundant colony types and describe bacterial morphology under the microscope
Thursday: 1) MEET IN TOWERS KITCHEN at 3:30 as usual. Check the "Cultures for Health" site and D2L docs and Katz' book for some baking ideas. You may bake/cook during class time, or other time you can schedule in Towers kitchen or at home BUT you will need to bring your creation to us in Towers some time during scheduled class time Thursday for evaluation. 2)Work on Midterm project Weebly site and 15-20 minute presentation 3)You may send us your Weebly link for “pre-evaluation” 4) Need INPUT ON YOUR WEB PAGE/PRESENTATION? Here are some pretty good sites froma previous food course taught by Bailey and I. The focus of the class was different and they were first semester freshmen but they are good starting points for what we hope to see.
